Here’s some ideas of what a day of vegan eating might look like:

Breakfast:
-My Favorite Smoothie
Overnight Oatmeal
-Trader Joe’s quick cook steel cut oats served with chopped apples, cinnamon and a spoonful of peanut or almond butter
Homemade Granola with fresh fruit
-Whole Grain Toast with Sliced Avocado and a sprinkle of Kosher Salt
-Happy Herbivore’s Apple Crisp Muffins

Lunch
-Whole Grain Wrap with hummus, greens, shredded carrots, tomato, avocado and pumpkin seeds and a drizzle of balsamic vingaigrette
Mexican Quinoa (I add a chopped onion and clove of garlic to the pot)- serve with crushed tortilla chips, avocado and extra cilantro and lime
Lemon Orzo with Spinach, Sundried Tomatoes and Olives
-Raw Slaw with Spicy Peanut Vinaigrette (Recipe below)

Dinner
Vegan Fajitas or Cheater’s Lentil Tacos (Recipe below)
Black Bean and Sweet Potato Soup with Red Quinoa from Oh She Glows
Coconut Curried Tofu and Spinach (in the crockpot! Easy & delicious!)
Lentil Shepherd’s Pie (sub plain soymilk and earth balance for dairy)
Fall Risotto from Heavy on the Veggie
Roasted Veggies over pasta or quinoa

Raw Slaw with Spicy Peanut Vinaigrette
Servings Vary

Basically for this you just gather the ingredients and make as much or as little as you want. You can use pre-cut bags of veggies or chop your own. It keeps for a few days in the fridge and is great for an easy lunch. I’ve also made a huge bowl of it for potlucks and every bite gets eaten, every time. Here’s the big recipe, and you can adjust to make an individual serving.

1 bag shredded coleslaw
1 bag shredded carrots
1 bag broccoli florets, chopped small
1 bunch cilantro, chopped
1 cup raisins (dark or golden)
1 cup chopped raw walnuts
optional: 1/2 cup slivered red onion
1 bottle Asian Style Spicy Peanut Vinaigrette (Trader Joe’s is delicious)

Cheater’s Lentil Walnut Tacos
serves 6-8

1 box steamed lentils (Trader Joe’s has them, so do most regular grocery stores, in the produce department)
1 cup walnuts, lightly toasted
1 package taco seasoning (get a good, natural brand or Trader Joe’s- don’t get one with icky stuff like MSG)
1/4 cup water or vegetable broth
Optional: 2-4 tbsp nutritional yeast

Place the walnuts in a food processor and pulse til finely chopped. Add lentils and taco seasoning and pulse til lentils are coarsely ground, but not pureed. Transfer to a small pot and add the water, and warm on the stove, adding more water if needed. Serve in taco shells or tortillas with your favorite veggie toppings.
