Two Yummy and Different Blueberry Recipes:
Salad with Blueberries and Lemon Vinaigrette
Inspired by Tombo Grille
For the Salad:
4-5 cups mixed greens
1 cup fresh blueberries
1/2 cup crumbled feta cheese
1/2 cup toasted chopped pecans
1/4 cup slivered red onion
toss together and dress with vinaigrette
For the Vinaigrette:
1/4 cup fresh squeezed lemon juice
1/4 cup olive oil
1 tbsp dijon mustard
2 tsp honey
pinch kosher salt and pepper
Combine all in a jar and shake well.

Sour Cream Blueberry Pie
from Frank’s wife Kristin
1 9 inch graham cracker crust
1/2 cup plus 3 tbsp. brown sugar
1 pint sour cream
1 egg, beaten
2 cups fresh blueberries
Blend sour cream, flour, egg and 3 tbsp. brown sugar in a small bowl. In another bowl, combine blueberries with 1/2 cup brown sugar. Pour half of sour cream mixture into crust and smooth out. Sprinkle blueberries over the sour cream mixture and top with remaining sour cream mixture. Bake at 400 just until set, about 20 minutes or so- try to pull it out before the blueberries begin to pop. Cool and refrigerate. Serve chilled.
